Irene WaltherIrene Walther was born and grew up in St. Louis, MO. Her childhood experience of simple living came from frequent visits to her grandparents' farm. She remembers her grandmother and aunts canning the produce from their garden and her grandfather and uncles growing crops. Irene graduated from the University of Missouri with a Bachelors Degree in Psychology. Her introduction to natural healing, chiropractic, occurred in 1973. At that time, she also began her journey to healthy eating. In 1974 she moved from St. Louis and spent the next 12 years living in several states across the country. She learned that different parts of the country eat different foods prepared in different ways than in Missouri. Her knowledge of different forms of natural healing also grew. In 1986, Irene moved to Orlando, FL. Her understanding of healthy eating, natural healing, and simple living has continued to grow over the years. Her journey has now led her to a simple lifestyle and a vegan diet. In 2007, Irene began growing vegetables in an urban setting and in a small space. At that time, she was introduced to the Organic Growers meetings of the Simple Living Institute, Inc. Those meetings have and continue to teach her so much about growing her own food. As a result, her garden has grown in both types of plants and quantity. Irene's heart is for simple living and eating healthy, organic, locally grown, and in-season food. She believes in returning to natural foods as the Lord gave them. Her concerns are for the deteriorating health of the American people and the need to get back to simple living and organic foods. Irene eats according to Macrobiotic principles, practices yoga, reads on many subjects, and studies the Bible to nourish her body, mind, and spirit. She enjoys walking, watching baseball, and spending time with her mother and friends. Irene works for the First Data Corporation.
